El Salvador Finca Paraiso Kenya Process (Aida Batlle Select)
This Aida Batlle Select coffee is grown on Finca Paraiso in El Salvador owned by Claudia Mathies Rank. The farm has been in her family for 3 generations.
We visited El Salvador early Spring 2019, and spent time with both Aida and Claudia. On our visit to Paraiso, we explored the nursery and farm learning what we could from farmers and pickers.
The coffees in Kenya are almost universally processed using a method called 'double fermentation', which is a variation of the washed processing method. It is considered best practice by most farmers in Kenya. The Kenya process is used for this batch of El Salvador Paraiso coffee.
